In The Kitchen: Talapia Fillets with Chilli and Lime
I saw some Talapia fish fillets on offer in Tesco and I decided to buy them to try out a simple, healthy and fragrant recipe. I haven't tried Talapia before so I was very excited to see what it will taste like andI can now tell you it is a very 'meaty' fish - it has substance. I can imagine Talapia fillets would be fantastic on a grill with a squeeze of lemon, or shallow fried with spices. As I wasn't overly hungry, but felt like I needed to eat something light and tasty, I created this quick and easy recipe - perfect for midweek nights when you don't have much time to cook.
You will need:
Talapia fish fillets
1 lime
Purple sprouting broccoli
2 baby pak choi
1 red chili
Soy sauce
Coriander leaves
Coriander paste / dried coriander
Preheat your over to 200C. Get some foil and make a parcel, so the juices of the fish and lime don't leak out whilst cooking. Place the Talapia fillet into the parcel and squeeze half a lime, cut the chilli (to taste, I like spicy food so I used a whole chilli), and add a little coriander paste or dried coriander into the parcel. Seal and place in the over for 17 minutes.
Whilst the fish is cooking use a small pan to bring water to a boil and add your broccoli and pak choi - place the broccoli in first, then add pak choi after about 2-3 minutes as it literally takes a minute to cook. You can do this when the fish has been in the oven for about 13 minutes so the veg will be hot when plating.
After 17 minutes, remove the fish from the oven. Plate up your vegetables and fish, and use the juice from the fish along with the chillies to drizzle over the dish. Add a little soy sauce and fresh squeeze of lime to really liven things up on the plate, and add with a garnish of coriander.
This recipe is so quick and easy, but it is also mega healthy as it doesn't use any oil or sugar, and you control your salt intake by deciding how much (if any) soy sauce you would like on your dish. With tasty and easy food like this, you can keep up with your diet/detox as well as indulging in yummy food!
